recipes for those with allergies
I personally am not allergic to anything (that I know of...), but I have cooked for people with allergies before, and I know how difficult life can be. I spent 10 months as a vegan, and reading the labels on everything and asking people what's in the food they're feeding you is a pain, I know. But even though certain foods may never be a possibility, there are ways to still enjoy certain things that weren't possible before.
For those with Milk or Egg allergies;
Here's an amazing brownie recipe that kept me going for my 10 months of Veganism.
You will need:
2 cups flour
1 cup water
1 cup brown sugar
1 cup sugar
1 teaspoon salt
1 teaspoon vanilla extract
3/4 cup baking cocoa
1/2 cup oil - preferably vegetable
1/2 teaspoon baking powder
1/2 cup chopped nuts (optional)
1/2 cup vegan chocolate chips (optional)
Then, once you've got together everything, you...
1. Boil water and 1/2 cup of the flour over low heat, stirring constantly, until it reaches the consistency of a thin gluey paste. Remove from heat and let cool completely.
2. Mix sugar, salt, vanilla, cocoa and oil. Then add the rest flour-water mixture. Mix it well.
3. Add the rest of the 1 1/2 cups of flour, baking powder and the nuts or chocolate chips (if you want to add them. Watch out for the people with nut allergies!)
4. Spread mixture into a greased 11 x 7 pan. Bake at 350 for 25 minutes, or until a knife can be inserted and come out clean.
Honestly, it's a very easy thing to make. I made this for my non-vegan friends when they would come visit, and even they agreed that it's about as good as traditional brownies. If you want to add a little frosting on top, you can do that as well...I'll try to find a good frosting without certain ingredients like eggs or Milk.
Just a quick WARNING: Mix the batter very very well before you pour it into the pan. If you don't, there are occasionally little chunks within the brownies.
