ALOO DUM

Ingredients for 3-4 servings:

10 small new potatoes, about 1/2 kg, 11/2 tbsp curd, 1 tsp ginger-garlic paste, 1/2 tsp turmeric powder, 1 tsp coriander powder, 1/2 tsp red chilli powder, 1/2 tsp black pepper powder, 1/2 tsp garam masala powder, 2 tbsp oil
1/2 tsp cumin seeds, 1 tsp salt

Preparation:

Peel and wash the potatoes. If only large ones are available, cut them into roughly equal-sized pieces.
Beat the curd in a large bowl till smooth and blended, add the ginger-garlic paste and spice powders. Stir well to blend. Prick the potatoes all over with a fork, and add them to the curd-spice mixture, spooning the mixture over them so that the potatoes are well coated.

Method:

Heat the oil in a pan with a tight-fitting lid, burning it if using mustard oil. Throw in the cumin seeds and fry for a moment Till golden and fragrant. Add the potatoes, and any extra curd mixture remaining in the howl, and cook on high heat, stirring all the time, till the masala dries and the oil separates. Add 1/2 cup water, and the salt, turn the heat to low, cover tightly and cook till the potatoes tender.
