WOW,FRIED EGGS…….!
Heat 1/2 tbsp bland oil in a frying pan till fairly hot but not smoking, turn down the heat and immediately break the egg into the pan. The underside will set on contact with the hot metal. As the egg begins to cook through, gently detach it from the pan by sliding a thin spatula under it, to make sure it isn't sticking.
Cook on low to medium heat till it is to your liking. If you like the underside brown and crisp, raise the heat a bit. To ensure more even cooking, you can spoon a little of the hot oil over the egg, or cover the pan.
If you like the yolk well set, turn the egg over carefully with the spatula, being careful not to break the yolk and cook till it is done to your liking. Remove it from the pan with the spatula, and serve with, or on top of, hot buttered toast.
To make fried eggs a bit more interesting, for 2 eggs crush a clove of garlic with salt, and cook gently in the oil along with '; 1/2 tsp lime juice, till the garlic just begins to turn golden. Add the eggs to the pan and fry as above. Garnish with a little dried mint rubbed between the palms and sprinkled over the eggs.
