CARAMEL SYRUP
Ingredients for 3/4 Cup syrup:
4 tbsp sugar, 1/2 cup water, OPTIONAL INGREDIANTS- 1-2 limes, 1-2 tbsp rum or brandy, 1 tbsp powdered cinnamon.
Method: Put the sugar into a small heavy-bottomed pan. Place it on low heat and let the sugar melt and caramelize, using a pakad to shake the pan every now and then. It takes about 5 minutes-keep an eye on it to be sure it doesn't burn.
When the sugar has melted and browned nicely, take it off the heat and let it cool for a few minutes, when the caramel will solidify. Add the water, return to the heat and bring it up to the boil on low heat, stirring occasionally till the caramel dissolves. Cool, and stir in the optional ingredients.
