MASALA TEA
Ingredients for 2 cups:
1-2 tsp tea leaves, half cup milk, Sugar to taste, 2 cups water. Any of the following: 2-cm piece ginger,1-2 green cardamoms, fennel seeds
Preparation: Peel and wash the ginger. Gently bash the ginger or cardamoms to bruise.
Method: Put the water and optional ingredient in a pan and bring up to the boil. As it approaches the boil put in the tea leaves and milk. Bring back to the boil and when it boils remove it immediately from the heat and cover it. Leave it to infuse for 2-21/2 minutes.
Put sugar to taste into the cups, stir the tea again. Strain into the cups and drink hot.
Note: The amount of tea leaves you use will vary according to their quality as well as the taste of the drinkers.
