SPINACH SALAD

SPINACH SALAD
Ingredients:
1 kg spinach
1/2 tbsp bland oil
1 cup creamy curd
1/2 tsp salt
1-2 cloves garlic
1/2 tsp black pepper powder
Preparation:
Prepare the spinach as given on p. 109. Beat the curd till smooth and blended. Crush the garlic.
Method:
Heat the oil in a large pan or kadhai, swirling it well around the sides. Add the spinach by handfuls, as it wilts and loses bulk, till you can get it all in. Cook uncovered on low heat till tender. Raise the heat and cook stirring for a few minutes till nearly dry. Leave to cool.
Blend the garlic, salt and pepper into the beaten curd. Fold the curd mixture into the spinach. If you like, you can avoid mixing them thoroughly, so that you get an attractive dappled or marbled effect.
Turn out into a serving dish and chill.
